Dr. Corson’s Vegan Black Bean Soup Recipe with Avocado and Cilantro Garnish

Today I’d like to share one of our favorite home cooking recipes – Dr. Corson’s Vegan Black Bean Soup Recipe with a beautiful Avocado and Cilantro Garnish. It’s just one of the delicious recipes from our upcoming book – the Dr. Corson’s 99 Quick and Healthy Recipes ebook.

It’s quick and easy to make, can feed a whole family, and it’s great for anyone who wants to eat healthier, lose weight, and feel better.

Dr. Corson's Vegan Black Bean SSoup

Dr. Corson’s Delicious Black Bean Soup

Prep Time: 10 minutes

Cook Time: 20 minutes

1 cup black beans
4 cups water
1 bay leaf

1 carrot, chopped
3 cloves
2 onions, chopped
3 cloves garlic
1 teaspoon chili powder or 1 small, fresh jalapeno pepper
Himalayan Sea Salt to taste
1 Small Bunch of cilantro, chopped
1/2 avocado, chopped

Serves: 2-3 people (double or triple the recipe to feed more)

Saute the onions, cloves, and garlic over medium heat. Add all ingredients except the cilantro and avocado to boiling water and simmer until tender. (Optional) Puree the mixture to create a creamy soup. When cooked, add cilantro and serve with avocado chunks on top.

Mmm mmm delicious!
