eating and enjoying hummus since at least the 13th century in Egypt and now you can too with this delicious vegan hummus recipe!

You can make a large batch of it up and it will keep well in the fridge for a week. It’s great for making quick sandwiches, as a midday snack or mini-meal, and as an appetizer as part of a meal or dinner party.

Vegan Hummus Recipe

Prep Time: 10 minutes
Ingredients:
• One 16 oz can of chickpeas (garbanzo beans), drained
• Juice from one lemon
• 1 tablespoon tahini
• ¼ cup water
• 3 cloves garlic
• Himalayan sea salt to taste
• 2 tablespoons olive oil
• 10 sprigs parsley
• ½ teaspoon paprika (on top as garnish)

How to Prepare the Hummus:

Drain chickpeas and add it along with all the remaining ingredients to a blender or food processor. Add 1/4 cup of water. Blend for 3-5 minutes on low until thoroughly mixed and smooth.

Place the hummus mixture into a serving bowl and create a shallow well in the center of the hummus using the back of a spoon. Add a small amount (1-2 tablespoons) of olive oil in the well. Garnish by sprinkling paprika on top.

Serve immediately with fresh, warm or toasted pita bread, or cover and refrigerate.

Storing Hummus

Hummus can be refrigerated for up to 5 days and can be kept in the freezer for up to one month. Add a little olive oil if it appears to be too dry.
